Prep Your Grill
Just like with your oven, preheating your grill to the proper temperature is imperative for the best grilled fish. We recommend preheating your grill to 300-325 degrees prior to putting your fish on. It’s also important to make sure your grill grates are completely clean. There are lots of ways to grill fish – directly on the grates, on a wood board, wrapped in foil, etc. Either way, ensure that you have cleaned the grates and that they are free of any debris before beginning to grill your fish.
Cook with the Skin
One of the concerns with grilling fish is that it can easily fall apart. One way to combat this is to grill your fish with the skin on. You can choose to get a boneless fish filet with skin on one side or grill a whole fish with skin on both sides. When grilling a fish filet with skin, cook with the meat side down first, cooking for about 70% of your total grill time, then flip to the skin side down for the remaining cook time.
Know How Long to Cook
For cooking your fish, the cook time can be difficult to determine. In order to figure out the right amount of time and create the best fresh seafood in Dallas, we suggest looking at the thickness of your fish filet. For every inch of thickness, plan to cook your fish for 10 minutes total.

Lock in Moisture
Fish can dry out quickly, particularly on a grill. In order to lock in moisture, slather both sides of the fish in vegetable oil. Then add a little salt and pepper, and you’re set! It’s also a good idea to grease the grates with oil as well.
