What Exactly is Prime Beef?

Meat can be designated by one of 3 categories - prime, choice, or commercial – by the US Department of Agriculture. The rankings are normally for beef, but lamb can also be rated as prime. Naturally, prime is the highest ranking available and is given based on the meat’s overall tenderness, maturity, and marbling. The marbling is evaluated as the amount of fat laced throughout the cut of meat because that fat adds flavor and juiciness to the cut of meat. Do not mistake the fat marbled throughout a cut of meat as the same as the fat on the outside – it’s simply not the same and does not induce the same tenderness! In terms of maturity, younger beef generally has more of that fat marbling and tenderness, thus it’s often given a prime designation. Older beef – or cuts that involve muscles that are more well used – is often more tough because of the added connective tissue throughout the meat.
