Have you heard of the Billion Oyster Project? This is an effort started in 2014 to rebuild New York Harbor's oyster population. Volunteers collect a ton of shells a day from 45 New York restaurants. They’ve restored 75 million live oysters, collected 2 million pounds of shells, and engaged the help of 8,000+ NYC students!

And here are the facts! The largest oyster on record, according to Guinness World Records, was found in Denmark in 2013. A Pacific Oyster, 13.97 inches by 4.21 inches. The individual weight was not available because it was part of a 6-shell cluster. But the cluster weighed 3.56 pounds. Likely large enough to provide a feast for your whole table!
